As you are reading this, I am probably camping with my family. We are going to be away for 3 weeks, we’ll have no access to electricity and I think that this will be the first time I have been that long without electricity.

The reason I am able to publish my posts while I am camping, is not because I have some sort of special skills. I am using the latest version of Wordpress, and I am able to write the posts and then set the date and time for them to be published. It’s a really cool feature.

Now, a few hours before we leave for the camping trip, I am asking myself the quesion: “How is it possible to eat healthy when camping?”

I am not saying that it’s very difficult, I am just thinking out loud. Because usually, when the weather is nice, and we are outside, we tend to barbeque and we just do it the easy way. We eat hotdogs, and probably some burgers. Well, I am vegetarian, so I’ll eat my stuff and that’s a lot healthier than the regular hotdogs and the burgers. But my stuff will also be ready made, and not as healthy as they probably should be.

This time, I think that I am going to do things a little different.

I know it will be a lot of barbequing, so I will try some grilled vegetables. I have actually never tried to barbeque squash and eggplant. I guess that this week will be the first time.

I might try to make some salads as well, it won’t be as easy as making it at home, but I there won’t probably be any problems. The kitchen isn’t as big, but on the other hand, my kids will probably be outside playing and I will have all the time in the world to make the salad.
